Ok the title of this recipe is not quite right… it is of course Wednesday meatloaf day, but I thought I would give it a nice twist. And you can actually do that yourself with this recipe. Because this meatloaf can be filled in many different ways. For example, you could hide an egg in the middle and work with different types of vegetables. It is also ideal for processing leftovers! Maybe you have half a pumpkin or a piece of carrot lying around. Nice to cut into pieces and use in the bread. And then it's : Wednesday that's meatloaf day! meatloaf recipe
Meatloaf is a dish consisting of ground meat, often combined with breadcrumbs, eggs and spices, which is then baked in the oven. The origin of the meatloaf is not exactly known, but it probably originated in Europe and was later brought to the United States by immigrants.
In Europe, meatloaf was a way to reuse leftover meat and mix it with cheap ingredients like breadcrumbs to make a nutritious and filling meal. The dish became popular in the United States during the Great Depression, when families had to get creative with their meals to keep costs down.

First preheat your oven to 180 degrees.
Then we carefully peel and finely chop the onions and garlic; this will release the delicious smell that will fill your kitchen. Cut the peppers, olives and mushrooms into fine pieces so that they mix perfectly. Then take a large bowl and put all these vegetables in it. Add the mildly spiced minced meat and the egg, and season everything with a pinch of salt, freshly ground pepper, and a generous amount of paprika and aromatic curry powder. This meatloaf recipe is the perfect choice for a warm and cozy dinner with friends or family. Let yourself be surprised by the flavors!
And then the fun job can begin, add the egg and some breadcrumbs and knead the whole into a nice mixed mass. If it is too wet, add some extra breadcrumbs. So I always do this by feeling how wet the minced meat feels. It should not be too dry so be careful.
Take your baking tin with it, I use a silicone mold because it comes out nice and easy later.

So put the bread in the mold and press it well. Put it in the oven for 40 minutes.
Wednesday that's meatloaf day
When your timer goes off, remove the bread from the oven, carefully drain the released moisture and then remove the bread from the mold. Serve with a delicious baked potato or with a salad.
