A raisin is simply a dried grape. To make them dry faster, they are soaked in potash. Potash is a mixture of salts mainly consisting of potassium carbonate. Potash is extracted through mining at a depth of up to 1200 meters. Why?
The potash makes small cracks in the grapes so that they dry quickly. And that can save up to a week. Then they are washed and the stalks removed. All in all, a process, because all the moisture has disappeared from the raisin, it is sweeter than the grape actually is.
Raisins are dried grapes that have lost their water through the sun or a drying machine. The water is out, the sugars remain in it. This makes raisins sweet and energy-rich. Yet those little raisins are full of antioxidants, potassium and vitamin B. Antioxidants protect your body against harmful substances, potassium helps regulate your blood pressure and vitamin B supports your metabolism and nervous system.
One hundred grams of raisins contains about 285 kCal. So not unlimited snacking, but you can eat quite a bit of it! Raisins are delicious as a snack, but also as an addition to your breakfast cereals, yogurt, salads or pastries.

- 3 el apple cider vinegar
- 1 el Dijon mustard
- 1 el honey
- 1 el persillade spice mix

And this is how you make it:
- Make it easy on yourself and buy pre-cut carrots. Otherwise, scrape your carrots and cut julienne in your food processor.
- Peel the apple and cut it into cubes.
- Take a bowl and mix all the ingredients for the dressing in it. Season with salt and pepper.
- Put everything in a bowl and add the raisins. Toss well and finish with fresh chives. Preferably let it sit overnight before eating it.
