For inspiration for this recipe for Yorkshire pudding with onion gravy, I took a look at Jaimy Oliver. One of England's most famous chefs. He had a very simple method for baking them, and you can have the perfect puddings from the oven in half an hour. Which may be a bit crazy for us, but in England they often fill them with gravy. You can also break them open and cover them with some salmon, for example.

If you make the puddings with a sausage in them, they are called a “toad in a hole”. These delicious puddings are also great to make for an English inspired Christmas menu, where they are a real eye-catcher on the table. With only a few ingredients, you don’t really need a lot to make them, which makes them perfect for both an uncomplicated dinner and for parties.

The combination of the crispy dough with the juicy sausage is truly irresistible and creates a cozy atmosphere, especially during the winter months.

Ingredients:
- 2 eggs
- ½ tl salt
- 100 ml Full Milk
- 100 gram flower - sieved
- sunflower oil
For the onion gravy:
- 2 onions - cut into half rings
- 800 ml beef boullion
- 2 bay leaves
- 50 gram butter
- 2 el sunflower oil
- 1 el Brown sugar
- 1 el balsamic vinegar
- 3 el cornstarch
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 230 degrees.
- Fill a muffin tin (note: no silicone material, but the steel version) with approximately 1,5 cm of sunflower oil per compartment and place it in the oven on a baking tray. This makes the oil very hot! leave it in for at least fifteen minutes.
- In a mixing bowl, beat the eggs with the salt and milk until very fluffy, sift in the flour and beat with a whisk until you get a nice lump-free batter. Pour this into a measuring cup.
- Wearing gloves, remove the baking tin with the muffin tin from the oven and carefully pour a layer of batter into each compartment. Please note that because the oil is very hot, it will immediately start to bubble.
- Place the baking tin with the filled muffin tins immediately back in the oven and lower the temperature to 190 degrees and bake for 20-25 minutes until the puddings have risen and are golden brown.
- In the meantime we make the gravy. Cut the onions into half rings.
- Melt the butter with the oil in a frying pan and fry the onions until translucent. Add the bay leaves and then the sugar and balsamic vinegar. Fry until the onions caramelize a little.
- Add the stock and stir well, let it cook gently over a low heat.
- Mix the cornstarch in a bowl with 3 tablespoons of water and add this paste to the onion gravy just before your puddings are ready in the oven. Using a wooden spoon, stir the gravy to the desired thickness and season with pepper.
- Remove the puddings from the oven and let them drain on a paper towel, then serve with some onion gravy poured into the holes of the puddings.
