I can hardly imagine that as a Dutch person you don't like peanut butter... We all grew up with it, right? A quick piece of peanut butter for a tasty snack. Then I now have another delicious snack in which peanut butter plays the leading role! These soft oatmeal peanut butter cookies are super quick to make and yummy. The outside of the cookies are a bit crunchy and the inside is nice and soft. You can store them for a few days in a Tupperware box, so you have your snack within reach. She will certainly have them out of the oven within 20 minutes, just let them cool slightly and then enjoy.

The chocolate drops in this recipe are optional. You can leave them out or add raisins, for example. Do you want more protein in it? - 130 gram oatmeal flakes
- 250 gram peanut butter
- 80 ml agave syrup
- 50 gram chocolate drops
- 75 gram nuts and seeds mix
- 2 eggs
- 1 tl baking soda
- 1 tl cookie spice mix
- 1 tl sea salt

And this is how you make it:
- Preheat your oven to 175 degrees.
- Take your bowl and beat the eggs in it, add the rest of the ingredients and mix everything with a spatula into a thick dough.
- Line a baking tin with baking paper and divide the dough into 12 rounds and place them on the baking paper.
- Bake the cookies for 12 to 15 minutes until the edges are nicely browned. Let cool briefly on a rack. Optionally, sprinkle some sea salt over the cookies.
