Well, January came and went and now we are starting to get used to a somewhat healthier lifestyle. That does not mean that all my recipes here are unhealthy! In fact, they are often just very tasty dishes. The snacking around it is what made the belt have to be loosened more and more. But to live like a fit girl with measured containers is another extreme. There has to be some kind of generous middle ground. Fiadoni are a type of Italian cookies usually eaten around Valentine's Day or other holidays. They are usually filled with ricotta, a sweet and creamy cheese, and other flavors such as lemon, almond or chocolate. They are usually baked in round or heart-shaped shapes and sprinkled with icing sugar or sometimes decorated with icing or glaze. Fiadoni are a popular treat strongly associated with Italian tradition and are a delicious way to celebrate Valentine's Day or other holidays.
And this soft low carb cheese clouds are a perfect example. Even my daughter was surprised and wanted to taste them.

Quenelles? What is that then? Making a quenelle is a particular cooking technique using two spoons. You form a kind of elongated ball with two spoons. This was usually pureed fish, but nowadays I see quenelles in desserts as processed. Then the shape will remain exactly as shown in the photo above. In this case the cheese melted and these soft low carb cheese clouds were shaped like an egg.

Nevertheless, these cheese biscuits are very tasty! Known from French cuisine, but making quenelles was already done in Roman times. It is fascinating to think that since those ancient days the love for food and cooking has only grown. Because of course people only learned to read and write much later, many cookbooks and cooking techniques were also put on paper very late. The origin is therefore sometimes no longer completely traceable, but that does not make the journey of discovery through the culinary world any less enjoyable. Every recipe tells a story and connects us with our ancestors, who shared their passion for cooking with us.

Ingredients:
- 40 gr grated cheddar
- 30 gr grated mozzarella
- 20 gr grated Parmesan cheese
- 50 gr almond flour
- 4 gr baking powder
- 2 eggs beaten
- spices to taste
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees and line a baking tray with baking paper.
- Take a bowl and beat the eggs in it.
- Add the rest of the ingredients and mix until smooth. You can now add herbs that you like or not, they also taste very good without herbs.
- Take your spoons and make quenelles with them. (see photo in this blog post on the website) Is that not possible? You can also make balls with an ice cream scoop.
- Place the baking pan in the oven for 10-12 minutes, when the edges start to turn a little golden brown they are ready.
