So easy to make you may wonder why am I buying this in a store? And the fact that they are on the table within twenty minutes makes it a very tempting snack to eat way too much of! Am I satisfied with this soft Sicilian amaretti cookies? Well you can say yes. How do they end up on the blog you might ask? Very very last minute discovered Mandy van Mandyandmore a mistake in her food blogger exchange project! She made an emergency call on Instagram and I decided to make a recipe from the almost forgotten Corien from “CoriensIten”, a nice Frisian blogger. She was accidentally not linked and that is of course not possible! A delicious amaretti cookie recipe macaroons
In this dish I use almond flour. Almond flour is a gluten-free alternative to wheat flour, made from finely ground almonds. It has a nutty flavor and is often used in baked goods, as a batter for meat and vegetables, and as a thickener in sauces. It is also popular in low-carb and gluten-free cooking and baking.
No sooner said than done, I quickly got to work and conjured these delicacies out of my oven. (Read more below the recipe.)

The funny thing about this story is that this recipe was already “swapped” by Corien herself with other fun foodies, namely De Danoi's! And because a recipe had to be made very quickly, I chose this recipe. Fortunately, I had everything in my house to make these fine cookies and I was able to shoot in no time. To then write out the recipe here and prepare it for you.

Ingredients:
- 150 gr almond flour
- 1 protein - from a large egg
- 75 gr granulated sugar
- 1 tl grated zest of a tangerine - biological
- 1 tl almond essence
- powdered sugar
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 170 degrees and line a baking tray with baking paper.
- Take a bowl and add all the ingredients except the powdered sugar.
- Mix into a nice dough ball and then divide into small balls.
- Put some powdered sugar in a bowl or bowl and pass the cookies through it so that they get a layer all over. Place them on the baking pan.
- Place in the oven for 15 minutes and then let them cool down.
- Delicious bites!
