Classics. There are those recipes that have been around for years. These often reappear around Christmas because they simply belong to the season. Or they simply cannot be missed on the Christmas table. Also this salmon en croute with herbs! A true classic in a crispy jacket. This year it appeared as a nice side dish on my Christmas table. Of course, a good fresh salmon also has enough flavor, but the herbs give it just that little bit extra. For example, in a recipe I use fresh dill and oregano, just the smell that these herbs give off is delicious. While the salmon was baking in the oven, my daughter followed her nose into the kitchen. “Mom, it smells good in the kitchen here”. Well that says enough right?
And this is how you make the Salmon en croute with herbs:
-First preheat your oven to 200 degrees
-Remove the rolls of fresh puff pastry from the fridge and place them on the counter, when they get a little warmer they roll out more easily.
-Take the salmon and cut it through the middle with a sharp knife.
-Take all the fresh herbs and remove the leaves from the sticks, only with the fresh flat parsley you can just leave it on. Then put them in your food processor with the spinach and the mascarpone and mix the whole into a smooth herbal mousse.
-Take the sheets of puff pastry and place the salmon on top, then spread the salmon with the herb mousse. Should be a nice thick layer. Then fold the package tightly. The puff pastry rolls are too big for these pieces of salmon, so you can make nice figures from the leftover puff pastry. I took a star-shaped cutter and decorated the top of the package with it.
- Finally, brush the package with the beaten egg and put it in the oven. Bake for 25 to 30 minutes until the dough is nicely golden brown.

Finally, remove the salmon from the oven and serve it on a nice plate. And there you have it: a beautiful side dish for the Christmas table
