Infected with the salmon virus by my Foodie friend Luuk I'm afraid! Because there is more and more salmon on the menu here. The nice thing is that you can cook with it in so many different ways. Because I am not a huge fish lover, I always dress the dish with lots of vegetables and I try to give it a lot of taste. In this dish of salmon en papillotte with pesto we make my own homemade pesto there. The big advantage of cooking “en papillotte” is that you can also make the parcels in advance and just bake them for 20 minutes and you can go straight to the table. Salmon en papillotte with pesto
What exactly is "en papilotte" and why can we do it this way? It is the cooking of fish, meat or vegetables in a package. In this way the products retain their taste, smell and vitamins. You must close the package tightly so that the steam cannot escape.
The nice thing about cooking this way is that you don't have to add fat or oil, making it a nice "lean" dish. You can add a little liquid, such as wine, but be careful not to use too much, otherwise it will become a drippy mixture.

Ingredients:
- 1 mod salmon
- 50 gram homemade pesto
- 2 fennel leaves
- 5 big green olives
- samphire - a few twigs
- bell pepper from jar - pieces of grilled bell pepper in olive oil
- 2 el Persillade (spice mix)
- 30 ml White wine
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the salmon steak and place it on a piece of baking paper. Sprinkle with the persillade mix.
- Preheat the oven to 200 degrees.
- Cut 2 "leaves" from the fennel and cut them into small pieces. (You can use the rest of the fennel for a soup, for example). Blanch the pieces in boiling water for 3 minutes and then drain.
- Cut the olives in half and make the pesto.
- Spoon some pesto all over the salmon steak and cover it with the fennel pieces, olives, samphire, pepper pieces.
- Pour in the white wine and fold the package tightly, you can use a tying string to keep the package together.
- Place in the oven for 20/25 minutes, if the steak is thicker than a little longer so that it is fully cooked.
- Remove from oven and serve, carefully opening as there will of course be a lot of steam coming out of the package.
