A little bit of your own, and a little bit from a bag. Sometimes you don't have to make it more complicated than necessary. Frozen vegetables still have a bit of a stigma that they are not healthy, or because they are not fresh. But usually those vegetables go into the freezer within three to four days after harvesting and are processed. I had already made a casserole with spinach, this time we are making a Salmon casserole with grilled vegetables recipe. The vegetables come from a bag from the freezer and we don't have to grill them ourselves first. This makes this a wonderfully easy casserole and we only need to use one dish! Okay, and one pan to cook the rice in, but you also have minimal washing up.

For this casserole I used brown rice, but of course you can also use white rice; it all depends on your own preference and what you have in stock. Or noodles are also possible, it just depends on what you like and what texture you want to give the dish. For some extra spice I added pieces of red pepper; if you are not a fan of spicy foods, just leave them out. The dish can also be made very well without it.

Check the freezer section of your supermarket for bags of vegetables. I used the grilled vegetables from Bonduelle because they are easy and have a good taste. But of course there are many brands and types that offer tasty options. Feel free to mix different types of vegetables to give your casserole an even more colorful and tasty look.

Ingredients:

  • 350 gram salmon
  • 400 gram grilled vegetables - (freezer bag Bonduelle)
  • 250 gram brown rice
  • 150 ml cooking cream
  • ½ red pepper - cut into rings

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Place the bag of grilled vegetables (frozen) in an oven dish. Place the salmon on top and sprinkle with some salt and pepper. Add the cooking cream and place in a preheated oven at 190 degrees.
  • Bake until the salmon is done, about 20 minutes.
  • Meanwhile, cook the rice.
  • Remove the dish from the oven and separate the salmon with a ladle and mix with the grilled vegetables. Spoon onto plates and sprinkle with some rings of red pepper.
