Inspiration. It can be found everywhere and taken from everywhere. From a telephone conversation with someone about food and suddenly getting a great idea to seeing someone's photo. Also for this salmon sashimi rice cake with avocado. Claudia from foodfromclaud9 posted a delicious lunch of rice cakes. She used fresh tuna and mashed avocado. Now I didn't have tuna in the house, but I did have salmon and avocado. So I used her idea of these rice cakes and made my own version of it!
Salmon sashimi is a dish of thin slices of raw salmon, served with soy sauce, wasabi and ginger. It is a variation of sashimi, a Japanese culinary art form that uses fresh, raw fish and shellfish. Sashimi has its roots in Japan, where it is traditionally the first course in a formal meal
However, salmon is not a traditional sashimi ingredient, because this fish also lives in freshwater and therefore has a risk of parasites. It wasn't until the 80s that salmon sashimi became popular, after Norwegian salmon farmers conquered the Japanese market with their frozen salmon, which could be safely eaten raw
And this is how you make the salmon sashimi rice cake with avocado:
-Remove the skin of the avocado and pit it. Place the pulp in a small blender with a tablespoon of lemon juice and puree.
- Cut the fresh salmon into small cubes and cut the chicory leaves into thin strips.
- Mix all the dressing ingredients in a bowl with a fork. Beat it all into a smooth sauce.

-Finally, take the rice waffles and first spread them with the avocado, then place some chicory leaves and the salmon on top. Garnish the rice waffles with the capers, sesame seeds and lemon mayo.
