I am not a fan of fresh coriander at all. I always use parsley for that. If you like fresh coriander, you can of course also use it in your salsa. Oh and if you have any leftovers you can just keep it in your fridge for the next day. I myself had some leftover salmon and I used it to make wraps for lunch the next day.

We cut a nice red pepper through the salsa to give it some spice. That also goes well with the sweetness of the nectarine. By the way, you could also use a peach. These two fruits are quite close to each other, only the skin is a bit different.

If necessary, add a little lime juice and fresh coriander for extra flavor. The sourness of the lime and the spiciness of the red pepper provide a perfect balance, while the coriander gives a fresh touch to the whole. This way you make the salsa even more tasty and interesting.

You need:

Ingredients:

  • 250 gram salmon steaks with skin - cut into strips
  • 1 tl ras el hanout
  • 1 el olive oil
  • 4 Tortilla wraps

For the salsa you will need:

  • 1 nectarine - in pieces
  • ½ a red pepper - finely chopped
  • 2 twigs Parsley
  • 1 Red onion - XNUMX onion - shredded
  • 1 lime - squeezed

For the avocado cream:

  • 1 avocado - mashed
  • ½ citroen - twigs
  • 125 ml sour cream
  • peper
  • salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First we make the salsa, cut the nectarine into small pieces, chop the onion, chop the parsley. Put everything in a bowl and squeeze the juice of the lime over it. Season with the chopped red pepper.
  • Mash the avocado and add the sour cream, season with salt and pepper and add the lemon juice. Stir well and refrigerate until ready to use.
  • Cut the salmon into strips and brush with the olive oil, then sprinkle with the ras-el-hanout and grill in a hot grill pan.
  • Spread the avocado cream on the tortillas, spoon some salsa on top and place a piece of salmon on top and serve immediately.
