Salmon from the oven with asparagus
Samphire, also called salicornia or salicornia, is a salt-tolerant succulent from the amaranth family. A succulent is a type of succulent plant that stores water in a part of its body. The amaranth family is quite an extensive plant term because it includes quite a few plants, but I will name a few. The quinoa, spinach, beetroot and Swiss chard also belong to this family.
Samphire grows on salt marshes, at the edge of the sea, in salt marshes, on beaches and between mangroves. It is mainly found in temperate to subtropical areas in the United States, Europe and Asia. Samphire is a typical seasonal vegetable that you can buy from the beginning of May to the beginning of September.
It has thick, tubular stems that are dark green in color and turn red in fall. The taste of samphire is very salty, like the sea, and also resembles that of fresh spinach, green asparagus or radish.
Samphire can be submerged in sea water, which is why they taste a bit salty. You can eat them raw or cooked. If you heat them, they usually turn a little more dark green. You have to be a bit careful with the amount you eat because they are quite salty. So often you don't have to add a lot of extra salt to salmon from the oven with asparagus.
