If, like me, you are not a huge fish eater, this might also be a good recipe for you. I always try to come up with something extra to give the fish a nice taste and I opt for an easy preparation method. This salmon from the oven with a feta crust and lemon is easy to make and has plenty of flavor. We ate delicious white asparagus with it and so we enjoyed this simple yet very nice meal. You need this for the Salmon from the oven with a feta crust
These are quantities for 2 people
- 400 gram salmon
- 1 citroen
- half a block of feta
- fresh dill sprigs
- 1 cup fresh Italian herbs
- pepper / sea salt
- 500 grams of white asparagus
- butter
And this is how you make the Salmon from the oven with a feta crust:
First clean the asparagus. Take them just under the cup and use a vegetable peeler to peel off the skins. Also cut off the hard butt. I have a steam oven myself so at my house they go in the steam oven. If you don't have one, buy an asparagus pan, but it can also be cooked in a regular pan. In my steam oven the asparagus are perfect when they have steamed for 30 minutes. Not too hard and not too soft.
Then take the fresh herbs and a bowl with it. Chop the herbs finely with a sharp knife and put them in the bowl. Add the juice of half a lemon. Crumble the feta and then chop it finely with your knife. Add to the container with the fresh herbs and mix well.
Baking the salmon
Meanwhile, preheat your oven to 200 degrees. Take the salmon and place it on a piece of baking paper. Sprinkle with salt and pepper and then spoon the feta spice mix on top. Place on a baking tray and put in the oven for 20/25 minutes until the salmon is nicely cooked.

In the meantime, the asparagus is cooked, remove it from the steam oven and place it on your plates. Spread with a lick of butter and spoon the salmon onto the plates. Serve with some fresh dill and: Delicious Happen!
