If, like me, you are not a huge fish eater, this might also be a good recipe for you. I always try to come up with something extra to give the fish a nice taste and I opt for an easy preparation method. This salmon from the oven with a feta crust and lemon is easy to make and has plenty of flavor. We ate delicious white asparagus with it and so we enjoyed this simple yet very nice meal. First clean the asparagus. Hold them just below the head and use a peeler to peel off the skins, so that the asparagus can retain their fresh flavour. Also cut off the hard end, this ensures that you get a tender bite. I have a steam oven myself, so at home they go in the steam oven where the temperature and moisture can be set perfectly. If you don't have one, buy an asparagus pan, but of course it can also be cooked in a regular pan with enough water and a pinch of salt for extra flavour. In my steam oven, the asparagus is perfect after it has been steamed for 30 minutes; it is not too hard and not too soft, just as it should be. It is also advisable to place the asparagus in cold water immediately after steaming to stop the cooking, so that it remains nice and crispy.

Then take the fresh herbs and a bowl with it. Chop the herbs finely with a sharp knife and put them in the bowl. Add the juice of half a lemon. Crumble the feta and then chop it finely with your knife. Add to the container with the fresh herbs and mix well.

Meanwhile, preheat your oven to 200 degrees. Take the salmon and place it on a piece of baking paper. Sprinkle with salt and pepper and then spoon the feta spice mix on top. Place on a baking tray and put in the oven for 20/25 minutes until the salmon is nicely cooked.

In the meantime, the asparagus will be cooked, bringing out their delicate flavour and perfection. Carefully remove them from the steam oven and place them on your plates with care, so that they are beautifully presented. Spread them with a nice lick of butter, which makes them even creamier and more flavourful. Then spoon the salmon, which may have been grilled or fried briefly, onto the plates, so that the flavours complement each other beautifully.
