It is always a party when the asparagus season starts. Then you can make all kinds of delicious dishes with this special vegetable. Also called white gold, because of its delicate taste and short availability. So you have to be quick to take advantage of it. Fortunately, you can prepare and combine asparagus in many different ways. For example with fish, such as salmon and shrimp. They go perfectly with the soft and creamy texture of asparagus. But you can also make a surprising and tasty dish with a fresh salad of chicory.

Ingredients:
- 1 package salmon - of 200 grams
- 6 asparagus
- 2 stumps chicory
- 1 tray Dutch shrimps
- 1 cucumber
- Parsley
- 1 citroen
- 1 sweet apple
- peper
- salt
For the salad dressing:
- 2 el honey
- 1 el mustard
- 2 el olive oil
- salt
- peper
- 2 twigs Parsley - finely chopped
- 1 el White wine vinegar

And this is how you make it:
- Cut the chicory stalks into fine pieces and place them in a bowl. Peel the apple and cut it into small cubes as well and add it to the chicory. Squeeze a little lemon juice over it so that the chicory and apple don't turn brown.
- Take a measuring cup and put all the ingredients for the dressing in it. Whisk the whole into a smooth dressing and pour a few tablespoons into the chicory/appétjes and toss. The Dutch shrimps are also allowed in this bowl.
- Peel the asparagus and cut off the bottom, you can steam or boil them, but just what you prefer.
- Make the rolls: Using a cheese slicer or vegetable peeler, shave long, thin ribbons of cucumber. Lay a cucumber ribbon flat. Cover the ribbon lengthwise with slices of smoked salmon. Spoon a small amount of the endive salad onto one end of the salmon-topped ribbon. Roll up carefully but firmly, starting at the salad side. Place the roll upright on a plate.
To serve
- Cut the cooked/steamed asparagus diagonally into two or three pieces. Arrange the asparagus pieces next to the salmon rolls on the plates. Garnish with fresh parsley if desired. Serve immediately
