This salad was actually a spontaneous creation that I made one day. I shared it on Facebook and Instagram and received many enthusiastic responses. Many people asked me if I wanted to share the recipe and if they could find it on my website… But I hadn't yet, so I decided to get to work quickly and write the recipe down for you so you can use it too to attempt! This is a delicious salad with salmon and samphire that you can easily make. Samphire is a salty vegetable that goes well with fatty salmon. You can bake or grill the salmon, whatever you like. Finish the salad with a fresh dressing of yoghurt, lemon and dill. It is a light but nutritious meal that you can serve with bread or potatoes.

For 2 persons Salmon salad with samphire you will need:

  • 1 pack of smoked salmon 300 gram
  • 1 box of samphire from the fresh shelf at the supermarket
  • 10 cherry tomatoes
  • half cucumber
  • 1 bag of mixed salad
  • freshly ground black pepper
  • olive oil
  • soy sauce

And this is how you make this Salmon salad with samphire:

-First take a small frying pan and add a small splash of olive oil. Grab some washed sprigs of samphire and put them in the frying pan. Fry them for about 2 to 3 minutes until they are glossy and then remove from the pan. Do not add salt because samphire is salt by itself!

-Take a plate and put the mixed salad on it first.

- Cut the tomatoes in the middle and peel the cucumber. You can cut these into wedges or small cubes.

-To make a nice dressing, put a little olive oil and some soy sauce in a bowl and mix it with some fresh pepper.

Finally, take your plate with the mixed lettuce and put the tomatoes, cucumber, pieces of smoked salmon on it and drizzle some dressing over it. Garnish with the samphire and some freshly ground pepper: Delicious Happen!
