I was allowed again at the opening of the mussel season being in Zeeland and that was a real party. For the first time we had a lot of rain but that didn't spoil the fun. On to Yerseke, a beautiful fishing village from where you already have beautiful views over the sea. The fishing boats that were quietly waiting in the harbor until they can feel the foam cups under their belly again. Once on board it already buzzes a bit and the atmosphere is cheerful among the fishermen who sailed with us to sea to fish the first catch from the Oosterschelde. For whom the real salty, salty mussel if you wanted to taste straight from the sea, they were opened directly for you. A photo opportunity could of course not be missed!

This year there were some concerns as I later heard from Marinus Padmos, mussel fisherman, with whom we sat at the table during lunch. The mussels have died en masse due to a large foam head on the Oosterschelde. This already happened in May 2019 and as a result a large part of the stock for this season has been lost. The catch this year is therefore somewhat smaller but nevertheless well-stocked mussels. And that became apparent during the lunch provided by Thijs Meliefste, chef of restaurant Meliefste from Wolphaartsdijk. He conjured up a true work of art on the table with mussels from the mussel season in Zeeland 2020.

You need:

Ingredients:

  • 1,5 Kilo Zeeland mussels
  • 1 ui
  • 100 gram samphire
  • 100 gram sea ​​lavender
  • 3 celery sticks
  • ground black pepper
  • olive oil

And this is how you make it:

  • Empty the container of mussels in your sink and take out the broken mussels. You can cook the rest later.
  • Thinly slice the celery, clean the onion and cut in half and then into half rings. Wash the samphire and sea lavender.
  • Put a tablespoon of oil in the pan and briefly fry the onion, celery, sea lavender and samphire. Then add the mussels and sprinkle some black pepper on top.
  • Boil for five minutes and shake the pan, when the shells open you can eat them.
  • Delicious bites!
