Convenience is king, right? Well, this time I have a really easy recipe! It's summer time and that calls for a nice summer recipe. We heat up the BBQ and get started with the plancha grill. Perhaps less known in the Netherlands, but this Mediterranean dish will surprise you. In preparation and in taste. If you have a gas BBQ, you will already have a plancha grill. (If you don't have one, these Zeeland mussels from the the griddle can also be made on a flat grill / tepan yaki plate)

This is my second recipe in the series of the #musselchallenge. This time it's a dish that you can put on the table in 20 minutes. Most of the work this time is actually chopping the vegetables and the Spanish / chili pepper. If you are not a fan of spicy food, you can simply leave out the pepper. We serve the mussels from the bbq with a nice piece of baguette and some dips.

Who would have thought that? Mussels from the BBQ! So you can see how versatile these shellfish are. In addition to being super healthy, they can also be prepared in no time. Make sure you heat your plancha well so that the shells are completely open when you scoop them off. Use a slotted spoon and scoop them into a large bowl.

You need:

BBQ/plancha grill

Ingredients:

  • 2 kg Zeeland mussels
  • 2 shallots - XNUMX onion - shredded
  • 3 cloves of garlic - finely chopped
  • 4 el fresh chopped parsley - finely chopped
  • 3 roasted peppers - from jar
  • 100 ml White wine
  • peper
  • salt
  • 1 Spanish / chili pepper - finely chopped

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Wash the mussels and let them drain in a colander.
  • Chop / slice / shred the peppers, garlic, shallots, red pepper, and parsley and store in small bowls.
  • Heat the plancha.
  • Divide the mussels over the plancha and sprinkle all the chopped vegetables on top. With a spatula you scoop the shells.
  • The moment the mussels open their shells, deglaze them with the wine and let them fry for a while until they open well. All in all, they are on the plancha for a good 5 to 6 minutes.
  • Take a bowl or bowl and use a slotted spoon to scoop the mussels into it. Serve immediately.
  • Delicious bites!
-Serve with a nice piece of baguette and some dipping sauces.
