Sometimes you start something in the wrong order. And in this case, I should have made this article for you at the very beginning of the start of my blog. Persillade, a small piece of background.

It is a French spice mix. The two basic ingredients are parsley and garlic. Now you can make a “wet” version with olive oil, but you can also make a dry version. That's what I prefer because I sprinkle it all over the place. I made this mix in this recipe from what I bought in the store and it contains just a little more herbs and spices.

In France you often find these pots of the Ducros brand. A jar of 0.43 grams easily costs 2,50 euros, so making it yourself is an interesting solution. Its use can be called endless because you can sprinkle it over meat, vegetables, eggs and so on. I use small preserving jars and you can keep it sealed for a year. But I can't do that here.

And this is how you make it:

  • If you add up all the ingredients you will see that this is a mix for a total of 100 grams. Handy to buy your jars on this.
  • For each herb or spice, take a small bowl and weigh the exact amounts. Is it really bad if you accidentally weigh a little too much on something? No, definitely not, but don't deviate too much from it otherwise it will taste very different.
  • Mix everything in a large bowl and fill the jars with it and you're done!
By buying all herbs / spices in large quantities at the wholesaler or online, you save yourself a lot of money. If you look at the kilo price of the jars from the supermarket, you quickly arrive at 60 euros per kilo….

    This is really nice to use with dishes. I always dry all my onions/shallots and peppers in the drying oven. So almost always in stock to mix :). At this time, chicken thighs in mushroom sauce is standing up. Also here are 2 tablespoons of persillade

    Sounds good to me, but if you do dry everything yourself first in the food dryer, then it is completely homemade. Plus, I want it organic. Had this for my birthday last year. Make my own yogurt in it. My basement is overflowing, gives such a wonderful feeling, that I do it all myself. I'm experimenting more and more.

    I made it today exactly according to the recipe. I did use dried parsley and rubbed it finely through a sieve. There are now 2 shoulder chops simmering with the new persillade. It smells delicious!! What a great idea to make your own. Thanks for the nice recipe.

    Should be added how to dry your garlic and onions
    Not how to buy all individually and just mix
    It's not really “make it yourself” recipe

    1. Most people do not have a dry oven in their house. So I am giving you my recipe with exact measurements to create the perfect persillade. Nowhere do I claim that this is a make it yourself, you mix it the way I meant it and how it is supposed to taste. Happening mixing! kind regards Francine
