We dive into the kitchen for a Dutch classic. There isn't really a fish shop here in the region, I easily have to spend 25 minutes in the car to get there. The fish cart is only available on Wednesdays, so if you fancy a nice fish then go ahead and try it yourself. We make homemade kibbeling from cod, now you can also use other white fish for this, but I personally find cod nice and thick and firm. Ideal for delicious cubes of fried fish. The spice mix of course it comes from my regular partner.

What makes bickering so irresistible? It starts with the fish itself. Freshness is essential. Think of juicy pieces of white fish, lightly seasoned and with a crispy layer of batter. The trick lies in the right balance: not too greasy, not too heavy, but just right. And then that sauce! Kibbeling is often served with a creamy garlic sauce or a fresh tartar sauce. The combination of the tender fish meat with the tasty sauce is heavenly. Add a lemon wedge for a touch of freshness.

- 400 gram cod fillet
- ½ el kibbeling spice mix - Van Beekum spices
For the batter you will need:
- 1 ei
- 200 gram flower
- 330 ml blond beer
- 1'' el kibbeling spice mix
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Pour about 3/4 liter of peanut oil into a pan and heat it to 180 degrees. Use a thermometer. (You can also use your deep fryer, but afterwards your fat will smell like fish).
- Cut the kibbeling into cubes and sprinkle with the spice mix.
- In a bowl, mix the egg with the flour and spice mix and add the beer while stirring, mix until you have a batter that flows slowly from a spoon, so you may not need all the beer. I chose a 0,0% beer.
- Place the cod pieces in the bowl and make sure there is a nice layer over everything, and then use a slotted spoon to scoop the fish into the pan in parts. Fry until they are golden brown and let them drain on a piece of paper towel.
