Zero waste bell pepper stew

A recurring item on this site is certainly a recipe for stew, but also not throwing away food. From time immemorial, stews have truly been the food of the people. Easy to make and could simmer for hours while it worked. When they got home, they could eat right away and the stomach was filled with good food. However, the stew does not really have a sexy appearance because yes, throwing everything in one large pan, as with this zero waste paprika stew, makes it a kind of "bubble".

  • 4 red peppers
  • 1 green pepper
  • 2 yellow peppers
  • 1 box of mushrooms
  • ½ zucchini
  • 2 white onions
  • 1 can of diced tomatoes
  • 300 gram beef strips

From the pantry:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Wash all vegetables, chop and then cut into small cubes.
  • Take your frying pan and add some olive oil. Stir fry the vegetables until they become slightly translucent. Then add the can of diced tomatoes and stir well.
  • Season with salt, pepper and persillade spice mix. You can add an extra clove of garlic if you want. Let it simmer for a few hours until the vegetables are completely soft.
  • Add the beef strips in the last fifteen minutes, because they are so thin, they do not have to stew for hours. You don't want tough meat.
  • Delicious bites!
Serve with for example orzo or white rice.

Vegetarian food can be really tasty!

    1. Sorry not mentioned, I'll edit. The meat can be added for the last 30 minutes. Beef strips are quickly cooked. If you are going to use stew, then do so for the vegetables and let it stew for a few hours. Gr Francine
