Of course you decide how spicy you want to make it. With a whole red pepper in it, or maybe even a Madame Jeannette pepper… The addition of pomegranate seeds gives it a nice sweet bite, and also some extra color. All in all a delicious colorful bowl full of happiness.

Ingredients:
- 500 gram chicken breast - in cubes
- 450 gram sweet potato - peeled and cut into blocks
- 150 gram black chickpeas
- 150 gram frozen peas
- 1 white onion - XNUMX onion - shredded
- 2 toes Garlic - squeezed
- 250 ml tomato sauce
- 400 ml coconut milk
- 3 twigs Parsley
- 4 el pomegranate seeds
From the spice drawer:
- 2 el Honey mustard BBQ mix - (or otherwise 1 tbsp smoked paprika powder)
- 1 el coriander powder
- 1 el garlic powder
- 1 tl black pepper
- salt - to taste
- 1 tl chili powder
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Peel the sweet potatoes and cut them into large cubes.
- Cut the chicken and season with the spice mix (or otherwise the smoked paprika powder and some salt).
- Fry the chicken cubes in the casserole with some olive oil but not completely cooked. (they will go back in the pan later, otherwise the chicken fillet will be too dry.) Put them aside on a plate.
- Fry the chopped onion and pressed garlic with the rest of the herbs and spices in the pan until translucent, then add the sweet potato. Fry the whole thing for a few minutes.
- Pour the tomato sauce and coconut milk into the pan. Now add the peas and chickpeas. Stir well and with the lid on the pan let it simmer for about 40 minutes. Then add the chicken and let it simmer for another 10 minutes.
- Scoop into bowls and sprinkle some parsley and pomegranate seeds on top! Delicious Bites!
