Would you like to make a quiche once, but without a dough base? Then this sweet potato with feta quiche is definitely for you. We do not make the bottom with puff pastry or savory pie dough. We make these from sweet potato. The flavors of these vegetables and the feta cheese are a perfect combination in my opinion. Making the recipe is not difficult at all, just a little longer than half an hour because it has to go in the oven twice. But after an hour you also have a beautiful recipe on the table. This recipe is also suitable for vegetarians because I didn't use meat for this quiche.
And this is how you make the sweet potato with feta quiche:
-First preheat your oven to 200 degrees
-Take the quiche tin and spray it with cooking spray, then set it aside.
- Then peel the sweet potatoes and cut them into thin slices of 2 or 3 mm thick, you can chop the onions and cut the courgettes into cubes.
- Now take the quiche mold and line the bottom with the sweet potato slices, this forms your "dough bottom", for the edges you can cut the slices through the middle and place them against the edge. Spray the potatoes with the cooking spray. Then put it in the oven for 20 minutes to bake.
-In the meantime, take a frying pan and add the rest of the chopped vegetables and fry them gently, season with salt, pepper and possibly some herbs.
-Then when the 20 minutes are up, take the quiche mold out of the oven and spoon the vegetables from the frying pan onto the sweet potatoes.
-In a food processor, mix the eggs, the feta slice and the cream until it is a smooth mix.
- Now carefully pour this mixture on the zucchini mix and put the quiche in the oven again for 30/35 minutes until it is golden brown.
