It may have taken some time before I had this recipe online here, but it is here! I tested it first, then forgot to photograph it. Then made it again but forgot to make the videos. A good three times is a charm, and this time with both the photos and the video. By the way, this sweet potato spinach chicken salad is very tasty and therefore certainly not a punishment to “have” to eat it several times. If I could recommend a recipe myself, this would definitely be one! a delicious sweet potato salad.
Sweet potato spinach chicken salad
To make it a little lighter I used cottage cheese instead of feta. If you don't like cottage cheese at all, just replace it with feta! Crumble 50 grams per plate over the salad and then enjoy. For the color I chose the orange sweet potato, but you can also make it with the purple of course! I also seasoned them with “baharat”, which is a slightly spicy spice mix that smells super nice and gives your dish a lot of flavor.

Ingredients:
- 350 gram chicken breast - cut in pieces
- 350 gram sweet potato - peeled and cut into cubes
- 200 gram spinach
- 20 Cherry tomatoes
- 100 gram cottage cheese
- 1 el baharat
- 1 el chicken seasoning
- 1 el Persillade (spice mix)
- 2 el olive oil
For the garlic sauce:
- 3 el half vanaise
- 3 el low-fat yogurt
- 1 teen Garlic - squeezed
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- Peel the sweet potatoes and cut them into cubes. Place them in an oven dish and drizzle the olive oil over them and sprinkle with the baharat spice mix. Shake well and then put in the oven for 25/30 minutes.
- Cut the chicken fillet into cubes and sprinkle with the chicken herbs. Fry the chicken in a frying pan with some olive oil.
- Place all the ingredients for the sauce in a bowl and mix into a sauce.
- Wash the spinach and dry thoroughly in a salad spinner or a tea towel.
- Place the spinach in the bowls and drizzle some sauce over it. Spoon the sweet potato and chicken on top and sprinkle with the persillade herbs. Finish with the cottage cheese and possibly some fresh parsley.
