The sun is shining nicely, time for another cocktail! And doesn't he look fantastic?! With this sweet pineapple mint mojito it will be a party on the table. I have completely embraced the mojito and the great thing about this cocktail is that you can easily serve it with or without alcohol. Pineapple is really a summer fruit for me and that's why it fits so well with this drink.
The way we cut it is a little bit complicated. But if you succeed, you will have very nice pieces of fruit that stand in your glass like a kind of cockatoo. This pineapple mojito is another very nice variation on the classic.
Sweet pineapple mint mojito
If you stick to the basic principles of this mocktail, you can vary to infinity. Various fruits, but also with the rum. Speaking of which, I'm not a big fan of spirits myself, so I always pour carefully. But you can play around with the amount you like in this sweet pineapple mint mojito. Coin is of course a must! This gives it its characteristic taste and really belongs to a drink like this.

Ingredients:
- 1 ananas - vertically cut into 6 pieces
- 3 limes - 2 squeezed and 1 sliced
For one mojito you need:
- 20 ml lime juice - freshly squeezed
- 40 ml pineapple juice - fresh juice
- 40 ml white rum
- 90 ml sparkling water
- 1 tl cane sugar
- 6 leaves fresh mint
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- The quantity described above is for one cocktail.
- Grab a cutting board and a super sharp knife and cut the pineapple vertically with the leaves still attached. The parts should now be quite wide and a bit of a triangle in shape. With your knife you cut off a part along the segments so that you are left with narrow, long segments of pineapple.
- Scoop the cane sugar and some mint leaves into the cocktail glass and mash it up a bit. Place one piece of pineapple in the glass.
- Remove the peel from the pieces of pineapple that are left and put the rest in your blender. Turn until everything is completely ground and then put it in a very fine sieve. Place it over a bowl and drain the pineapple juice. (You can also buy pineapple juice in a carton, but that's fine too.)
- Pour in the rum, lime and pineapple juices into the glass and top up with crushed ice.
- Finally, top up the glass with sparkling water.
