Sometimes I get an idea for a new recipe while cooking, then I see something lying on the counter or in the fridge and “poof” the idea is there. In this case, a few thick beautiful blackberries looked at me from the fridge and they had to go! So now there was one offering tarte tatin on my list and I thought why not fill the holes with the blackberries. The colors go together so nicely. Sweet beets and blackberries tarte tatin
This cake has a special history that you may have already heard. It was created by a happy coincidence when sisters Stephanie and Caroline Tatin wanted to bake an apple pie. The sisters were the owners of the hotel "Tatin" in the village of Lamotte-Beuvron, which is located in the heart of France. T
One day when they put an apple pie in the oven, they forgot to put the bottom underneath. They then decided to turn the cake over and this is how the famous apple pie tatin was created. This region is of course very proud of this cake and if you ever go there you will see it everywhere.
This recipe is so versatile that you can come up with all sorts of variations on it, like this sweet beet and blackberry heart tatin. You can make the cake both savory and sweet, and use different ingredients. This version combines the best of both worlds: a sweet crust with a savory beet and blackberry filling. 🥧

Ingredients:
- 4 cooked offering
- 10 tal blackberries
- 1 role puff pastry
- 4 el light brown caster sugar
- 3 el balsamic vinegar
- fresh mint
For the sauce:
- 3 el Chavroux, soft goat cheese
- 3 el low-fat yogurt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat the oven to 200 degrees.
- Add the quiche tin. Add the sugar and the balsamic vinegar and mix it all together.
- Slice the cooked beets. Place it on the sugar mix. Fill the holes with the burrs.
- Make the sauce by mixing both ingredients together.

- Cut the dough to size and carefully fold it around the beets. Place in the oven for 25 minutes until the dough is golden brown. (reduce the temperature to 180 degrees if it goes a little too fast)
- It may be a bit moist around the dough, drain carefully and only then tip the cake over. Place a plate the same size as the pie on the dough, grip the quiche tin with oven gloves and turn the whole thing over. Garnish with the sauce and fresh mint.
