As you can see in the picture, it's one for the moms and dads because we use rum in the dressing!
The sweet Caribbean coleslaw with fruit is a wonderfully fresh and colorful salad that goes perfectly with a summer barbecue or picnic. This salad is inspired by the tropical flavors of the Caribbean, where cabbage is a common vegetable. The cabbage is mixed with pineapple, mango, papaya, red onion, coriander and a creamy dressing of yoghurt, mayonnaise, lime juice and honey. The salad is easy to make and can be prepared in advance. This way you have more time to enjoy the beautiful weather and the company.

Are you a bit lazy or just don't feel like cutting the vegetables? You can buy the cabbage and carrot pre-sliced in the supermarket. That saves a lot of time with the preparations. Yes, that is a bit more expensive than buying uncut, but sometimes convenience just serves people.
Take a large bowl and put the two types of cabbage and the carrot in it. Peel the red onion and chop it. Cut the mango and pineapple into pieces. Add to the bowl with cabbage and carrot and toss well. Save a few pieces of mango or pineapple to decorate the salad.
The dressing
Because it is quite a lot of vegetables that do not have a very strong taste, this salad can use some spice. And they are not averse to that in the Caribbean either.
Place all ingredients in a measuring cup and blend until smooth. Pour this over the salad and leave it in the fridge overnight. The flavors soak in so well and make it extra tasty. Of course, you can omit the rum if you want to make it kid-friendly.
