Maybe when you see these pictures you think why is that drink so cloudy? That's because of the Pastis. When you mix it with another liquid, it becomes "milk-anise-like" in color. Part of this drink is also the aniseed flavor it has. Pastis is a spirit from France that gained popularity after absinthe was banned. It will make you really drunk, by the way… Pastis also has a very high alcohol percentage, at least 40%. That is why we also shake this sweet pastis Niçois cocktail with some fruit juices!
Sweet pastis Niçois cocktail
You will probably have noticed that a lot of Pastis is drunk on French terraces. Usually just mixed with water. Then one becomes a bit milky in color. To make it a bit more hip, we have now turned it into a nice summer cocktail. The sweetness of the peach goes well with the sourness of the lemon and the aniseed flavor of the Pastis. Drink responsible…. that should certainly be the warning with this drink!
The Pastis from this sweet pastis Niçois cocktail comes from Marseille, the city where this aniseed liqueur was first made by Paul Ricard in 1932. Yet it has the name Niçois (Nice), why it is so called I have not been able to fully find out. But this drink is widely drunk throughout Provence and therefore fits perfectly with this summer theme of the French weeks we have here at Delicious Happen.
Pastis is a wonderfully refreshing aperitif that you can mix with water or fruit juice. In this cocktail I use orange juice, lemon juice and peach syrup for a sweet and fruity twist. It's a simple recipe that you can make quickly and enjoy in the sun.

Ingredients:
- 90 ml Pastis
- 120 ml orange juice
- 60 ml lemon juice
- 30 ml peach syrup

And this is how you make it:
- Fill your shaker with all the ingredients from the list and add some ice.
- Shake well and then pour into glasses with some ice.
- Decorate with a lemon.
