Sweet and sour pickled red onion
Pickled red onion is a delicious way to give your salads, sandwiches or burgers a fresh and spicy twist. You can add all kinds of spices to make it even more delicious. I opted for a simple combination of salt, black pepper and white mustard seed. But you can also vary with other seasonings, such as allspice grains or fresh dill. That just gives a different accent to your sweet and sour onion.
Moreover, you can discover your own favorite mixture. A jar of sweet and sour pickled red onion is very easy to make and you don't need much. All you have to do is cut the red onion into thin rings and place it in a clean jar with the spices and a mixture of water, vinegar and sugar. Then you put the jar in the fridge and let the flavors infuse well. After half an hour you can already enjoy your homemade pickled red onion, but it gets even better if you leave it overnight.
This makes the onion softer and sweeter and absorbs the spices better. You can keep a jar of sweet and sour pickled red onion in the fridge for about two weeks, but I think it will be used up quickly with you too! Ingredients:
- 3 big red onions - cut into thin rings
- 100 ml vinegar
- 50 gram sugar
- 200 ml water
- ½ tl sea salt
- 1 tl mustard seed
- ½ tl black pepper - coarsely ground
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the saucepan and add the water with the vinegar and sugar. Bring to a boil and make sure the sugar has dissolved.
- Add the salt, black pepper and mustard seeds, and the thinly sliced red onion rings.
- Mix it all well and then scoop it into your preserving jar. Let it cool for a while and store in your fridge.
