Making this delicious “cake” is very easy again! You mix everything in a large bowl, pour it into your baking tin, bake it for a while and you’re done. It’s child’s play. Logically, the more honey you add, the sweeter it tastes. I added two tablespoons myself, but I can imagine that someone else might not find that sweet enough. Even though it’s honey, sugar is sugar. So to keep it healthy, you just don’t add too much. After baking, you can sprinkle some powdered sugar on top when serving. That gives it a “cake feeling”.

Ingredients:

  • 330 gram Greek yoghurt - 10% fat
  • 200 gram summer fruit
  • 2 el almond flour
  • 2 el honey
  • 25 gram whey powder - vanilla flavor
  • 3 eggs - XL size

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 175 degrees.
  • Line a baking tin or oven dish with baking paper. (approximately 20 by 15 cm)
  • Mix the yoghurt with the honey, almond flour, whey powder, and eggs in a bowl and beat with a whisk until smooth.
  • Pour into the baking tin and scoop the summer fruit into it. Spread evenly over the entire tin. Place in the oven for about 35 minutes, may need a little longer. It is done when you can stick a skewer in it and it comes out clean.
  • Remove from oven and let cool on a rack before cutting. Store in the fridge and enjoy!
