Summer dessert with French apricot

Fruit is often much tastier in warm countries. It has matured much longer on the trees and is nice and sweet. The same goes for the apricots I bought for this summer dessert with French apricot. Super ripe and I was able to squeeze the pit out of the fruit. The apricot traditionally comes from Northeast China and has managed to reach Europe through some wanderings. You can find a lot of tarts with apricots and it is also very tasty from the grill or the bbq. I myself am not a huge baker and here in France where I made the mascarpone dessert, there is no oven at all. Making a dessert with it is therefore obvious! Get started with this summer dessert with French apricot.

And this is how you make summer dessert with French apricot:

Take the Madeleines and crumble them over a plate. You can of course bake Madeleines yourself first, but I bought them from the best bakery in France. You can find this one in Aix en Provence and it's called "Christophe Madeleines", you buy a box with 20 pieces for a tenner. Try again to come home with a half filled box 😉

The tastiest madeleines ever!!

Take a large bowl and add the whipping cream, mascarpone, and 4 tbsp of sugar and beat until thick and fluffy. Make sure you use an electric mixer for the best results, so that the cream has a light and fluffy texture. It is important not to over beat, so that you retain the airiness which makes the end result deliciously light and tasty. If you like, add a dash of vanilla extract for extra flavour, and mix everything together until you have a perfect consistency.

Cut the canteloupe melon and the apricot for the summer dessert with French apricot into small pieces and store in containers until use.

Take your glasses and put a layer of crumbled Madeleine in it first, then some mascarpone whipped cream and then a layer of fruit.

Fill the glasses until they are full and serve.
