You need:

Ingredients:

  • 1 avocado
  • 1/2 canteloupe
  • 3 nectarines
  • 1 Spanish / chili pepper
  • 1 cucumber
  • roasted pine nuts

For the dressing you will need:

  • 2 tablespoons honey
  • juice of a lemon
  • 4 tablespoons olive oil
  • salt
  • peper
  • 1 chopped shallot

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First cut all the nectarines in half and remove the pit. Then cut them into nice wedges and put them in a bowl.
  • Then whisk all the ingredients for the dressing into a nice dressing, pour it over the nectarines and let it marinate in the fridge for a while.
  • In the meantime we will get started with the canteloupe, with a special melon spoon you scoop balls out of the melon until it is completely empty. Keep the balls on a plate. Summer salad at the bbq
  • Toast the pine nuts in a frying pan, but be careful because they burn very quickly.
  • Chop the red pepper, cut the cucumber into wedges, and finally the avocado. You can drip some lemon juice over it so it doesn't turn brown.
