They are available again: strawberries, blueberries and raspberries! They are still growing fast in my garden, but there are all those delicious thick raspberries in the supermarket. And what could be better than making delicious summer desserts with mascarpone whipped cream? Even Jools was thrilled when she saw them. The nice thing is that these strawberry desserts in a glass are also on the table in no time, so you can spoil everyone with these desserts.
By the way, did you know that those delicious Sweet Eve raspberries originated in England? There, master grower Peter Vinson has been working hard for more than 25 years to get the perfect strawberry. He also wanted a raspberry and these have been on the shelves since 2015.
We now also have a number of Dutch growers who grow these raspberries here in the Netherlands. The raspberry bears fruit from April to November, so we can enjoy it for a long time to come! Ideal for these summer strawberry desserts with mascarpone whipped cream.

In this recipe we use mascarpone, which is often used in desserts. Mascarpone is actually a type of cheese made from cream that is thickened with citric acid or vinegar. First made in Lombardy southwest of Milan, mascarpone has been used in Italian cooking since the 16th century. Mascarpone is prized for its creamy taste and soft texture, and is often used as a base for various sweet recipes, such as tiramisu, cheesecake, panna cotta and mousse.
This cheese is also delicious to combine with fruit, honey, nuts or chocolate. Mascarpone is rich in fat and calories, as well as calcium and protein. You can buy mascarpone in the supermarket or make it yourself by heating cream and adding lemon juice or vinegar. Then let it drain in cheesecloth until it reaches the desired thickness. Mascarpone is best stored in the refrigerator and used up within a few days.
It does not have a strong taste by nature, which is why sugar is often added to desserts. It is often used in the world famous dessert Tiramisu, which makes me like to use it for this kind of delicious desserts.

Of course the possibilities in these types of desserts are endless, the different types of cookies, whipped cream or the fruit you can use. You can use seasonal fruit all year round. Think strawberries, peaches or cherries in the summer, or apples, pears, tangerines or cranberries in the winter. This way you can make a different and delicious dessert every time!
For example, you can make a classic trifle with ladyfingers, vanilla custard, whipped cream and strawberries. First, soak the ladyfingers in orange juice and place them in the bottom of a large bowl. Then you spoon a layer of vanilla custard over the cookies. Then divide the strawberries over the custard. Finally, whip the whipped cream until stiff and pipe it over the fruit. You can decorate the trifle with chocolate shavings or almond shavings.

You can also make a tropical dessert with coconut cookies, pineapple, mango and coconut cream. First, break the coconut cookies into pieces and place them in the bottom of four glasses. Then cut the pineapple and mango into small cubes and mix them together. Then you spoon the fruit over the cookies. Finally, whip up the coconut cream and pipe it over the fruit. You can decorate the dessert with grated coconut or mint leaves.
So you see that you can make a delicious and festive dessert with a few simple ingredients. Of course, you can also use other types of cookies, fruit or cream, depending on your taste and preference. - 150 ml mascarpone
- 10 butter cookies

And this is how you make it:
- Grab your glasses and have them ready on your counter. First we cut the strawberries into slices. Cut them vertically so that you can see the shape of the whole strawberry. Carefully stick this to the edge of the glasses. Cut some strawberries into cubes to use as a filling in the glasses.
- In a large bowl, beat the mascarpone with a whisk or mixer until soft. Add the unbeaten whipped cream and the bag of klopfix and start mixing on a low setting. Increase the speed and beat the mixture to a lumpy consistency. If necessary, add 2 to 3 tablespoons of granulated sugar to make it a bit sweeter. Place in the fridge until use.
- Take the biscuits and crumble them over a bowl. Because they are butter cookies, you will not have that much trouble.
- Grab the whipped cream and fill the bottom of the glasses with some whipped cream. Then a layer of biscuit crumbs. Then a layer with strawberry cubes and some blueberries, until you reach the top of the glass.
- Finally, we place the delicious raspberries on the dessert.
