Let me just not be a huge cake baker, but a cookie works best for me… Well with shortcrust pastry you can also make a beautiful summer shortbread number cake! I was allowed again record a cool video.     -First cut the numbers you want to make from baking paper. You can decide how big you want them, but of course no bigger than a baking pan that fits in your oven. For example, you could also make letters to bake such a person's name.

    - Grab your food processor and first add the flour, icing sugar, almond flour and butter cubes. Mix this until you get a grainy dough. Then add the beaten egg with the vanilla and a pinch of salt. Turn the mixer back on and you will see that a nice ball of dough will soon be formed.

    -Take a piece of cling film and place the dough ball on it. Close it and put it in the fridge for an hour. For these numbers I needed a total of 4 dough balls. So you make 4x these quantities again.

    -After the hour, take the ball out of the fridge and place it on a baking paper. With the rolling pin you roll out the dough to a thickness of half a cm. Then place your number on the dough and cut out the shape with a knife. You can of course use what is left over. When you have made all your figures, place them on a baking tray or, for example, a cutting board in the fridge for half an hour until they are stiff again! That's very important, so don't miss it.

    Baking the numbers:

    -Preheat your oven to 180 degrees. Take 1 figure from the fridge and carefully place it on a baking tray. (Your figure is already on the correct baking paper in the fridge, so you prevent it from breaking.) Bake it in the oven for about 12 to 14 minutes. The edges may be a little brown and the center a nice golden brown. Remove from the oven and let it cool completely on the tin. Then you can carefully lift the numbers off with 2 spatulas or knives. Repeat this process until all your numbers for the summer shortbread number pie are baked and cooled.

    The whipped cream mix for the letter or number cake

    -While the numbers are baking you can of course make your whipped cream mix. First put the mascarpone with the icing sugar in your bowl and mix on low speed until the mascarpone has completely softened. Then add the whipped cream and start mixing on low speed. Then you can increase the speed to make a nice solid mix. Spoon into large piping bags and then refrigerate until ready to use. (For these numbers I needed twice the amount of ingredients)

    Once all your numbers have cooled down, place them on a large plate or tray where they can rest nicely. Take the piping bag and pipe nice tufts of equal size on the bottom layer. Then very carefully place the second layer of shortcrust pastry on top and repeat this process one more time. And then the fun part can begin! The decoration. I opted for fresh fruit and chocolates. Then serve directly to your guests and: Delicious bites!

    If you are celebrating the party with someone else, take the letter or number cake separately and build the cake on the spot so that you can serve it right away and it can't break in the car! shortcrust bottom
