Oven dishes only for the winter? Well, you can also turn on your oven in the spring or summer for a nice, quick and easy meal. HAK vegetables asked me to get started with one of their new stand-up pouches. I chose the sweet potato curry version and gave my own twist to this vegetarian sweet potato casserole recipe. We don't always have much time to cook during the week, so this is definitely a solution.

Besides the fact that the bags themselves are already full of vegetables, we also add extra vegetables ourselves. This meal is a vegetarian casserole, if you want you could also add minced meat. This sweet potato recipe is a bit reminiscent of a chili sin carne. The total preparation time is only a maximum of half an hour. Ideal for a busy working day.

As you are used to from me, this sweet potato recipe is easy to adapt. You can also use the leftover vegetables from your fridge very nicely. If you don't like mango, or at least don't like fruit in your hot food, replace it with another vegetable. As I wrote, this is a vegetarian casserole. But you can also do something with this, such as fried bacon, chicken pieces, or sausage cut into pieces.

You need:

Ingredients:

  • 1 HAK from the oven bag of sweet potato curry
  • 3 sweet potatoes
  • ½ zucchini
  • 1 Spanish / chili pepper
  • 150 gram grated cheese
  • 2 fresh parsley sprigs
  • 1 mango

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Peel the sweet potatoes and cut them into small cubes. Do the same with the mango and zucchini.
  • Boil the sweet potatoes for about four minutes on high heat and add the zucchini at the end. Cook for another minute and then drain in a colander.
  • Spoon the vegetables into the baking dish and add the mango, mix it and then spoon the vegetables from the bag on top. Divide the grated cheese over the dish and put in the oven for 20 minutes.
  • Garnish with fresh parsley and red pepper.
  • Delicious bites!
