Summer stew with endive and peach

Estimated reading time: 2 minutes

The summer stew is already well established. Of course you don't use the real winter vegetables such as kale. Endive, for example, is now available in the summer. We will therefore also use this vegetable in this summer stew with endive. There are plenty of peaches available at the moment, but you could also use fresh nectarines. The salty taste of the fried bacon in combination with the sweet goes well together. I think the use of fruit and vegetables goes very well together and you can see that in this recipe. Getting started with the summer stew with endive and peach.

And this is how you make the summer stew with endive and peach:

Peel the potatoes and then boil them for 20 minutes.

-In the meantime, wash and cut the endive and fry the bacon in a frying pan until nice and crispy, in another frying pan you fry the slafins gently and regularly. Save some of the bacon fat in a small bowl to mash the puree with later.

- Cut the peaches into small cubes.

When the potatoes are cooked, drain them. With the butter and the collected bacon fat, mash the potatoes into a stew. Add the endive and mix until you have a nice stew. Finally, add the peach cubes and bacon and gently stir through. Then season with some salt and pepper.
