For me, baking bread has to be an easy process! So you won't see me working with sourdough bread or bread that has to rise for hours and hours and all kinds of complicated kneading methods very soon. This sun-dried tomato and olive bread gives none of that. No rising time, little to no kneading, and certainly no waiting for hours. The only annoying thing is having to wait a little while until it has cooled down a bit before cutting it. But my idea: serve it nice and warm and enjoy it immediately. A little bit of butter on top... oh this is really delicious!

Sun-Dried Tomato and Olive Bread – Quick Mediterranean Bread Without Rising Time
We already add some to the dough Italian spice mix add, that gives that unmistakable smell and taste to your bread. I also added capers, if you don't like them you can leave them out. Actually you can decide for yourself which additions you use, you could also sprinkle pieces of meat or for example Parmesan cheese on the bread. The bread is an adaptation of a recipe that I made before. The soda bread, a bread that never fails here and is made quickly. Admittedly a sourdough bread can be a bit airier in structure with those holes in it. But I think this bread is fantastic!

Quick Mediterranean Bread with Sun-dried Tomatoes, Olives and Capers

Ingredients:
- 500 gram wheat flour
- 375 ml buttermilk
- 75 gram butter - cold, cubed
- 50 gram sugar
- 1 tl baking soda
- 1'' tl salt
- 1 ei
- 10 Sun dried tomatoes - chopped into pieces
- 15 green olives - chopped into pieces
- 2 el capers
- 2 el italian herb mix
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 190 degrees.
- Take a bowl and add the dry ingredients first, mix everything well.
- Add the cubes of butter and knead them all the way through the flour so that they become small grains.
- Add the tomatoes, olives, and capers and mix well.
- Now add the egg and buttermilk and mix briefly until a coarse cohesive dough is formed. (This can be done with a wooden spoon) Do not mix too long, the mixture will remain very coarse and grainy.
- Flour your work surface and scoop the dough out of the bowl, shape the dough into a ball. Be careful, it is very "sticky", so flour your hands as well so that it sticks as little as possible. Cut a cross in the dough with a knife and sprinkle some Italian herbs on top.
- Place a sheet of baking paper on the bottom of your springform pan (the bread does not have to touch the edges, it can also be placed on a quiche pan or a flat dish). Place the ball on top, it will rise and expand a little during baking.
- Place in the oven for 40-45 minutes until golden brown on the outside.
- Let it cool down a bit before cutting it. Delicious Bites!
