A few years ago I ate them for the first time and they have been on my to-cook list ever since. And now that I have finally seen the light when it comes to baking, it was high time to put these black bean cashew brownies in the oven. And again, this is not a super complicated recipe, but just an easy to follow ingredient list. I did choose a different type of sugar in this recipe. Namely coconut blossom sugar. If you are wondering why coconut blossom sugar is used in this recipe and whether you can replace it with regular sugar, it is good to know that coconut blossom sugar is extracted from the blossoms of a certain palm tree, not the same one as the palm tree that coconuts grow on.

Coconut blossom sugar has a unique taste and aroma that can best be described as a delicate, slightly caramelized note. So people sugar is sugar, be it cane sugar, palm sugar or refined sugar. You could also make this recipe with a sugar substitute, but I didn't do that.

You need:

  • 400 gr black beans - (canned )
  • 75 gr coconut blossom sugar
  • 50 gr cashew nuts (+ 12 to decorate) - chopped
  • 30 gr cocoa powder
  • 100 gr dark chocolate - chopped
  • 35 gr broken linseed + 50 ml water
  • 4 el peanut butter
  • 1 tl baking soda
  • ½ tl sea ​​salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 180 degrees.
  • Take your food processor, add all the ingredients from the list except the 12 cashew nuts to decorate and the chopped dark chocolate. Make a coarse batter.
  • Add the chopped chocolate and stir very briefly so that it is mixed into the batter.
  • Take your baking pan and line it with baking paper. Scoop the batter from the food processor into it and press a little flat and neatly into the mold. I had a square shape of about 20 by 20 cm.
  • Carefully draw lines on the brownie with a knife so that you divide it into 12 pieces. So don't push all the way down. Push a cashew onto each square.
  • Place in the oven for 30 minutes until the top is slightly cracked. Then let it cool before cutting into small cubes.
  • Delicious bites!
