Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
Let's make the dressing first. Grate the Parmesan cheese with your microplane grater. Place all ingredients in the blender except the olive oil. Turn until you have a smooth sauce, then add the oil. Turn again and then pour everything into a glass bottle. Set aside until use.
Place a large pan on the stove and fill it with water and a pinch of salt. Blanch your green asparagus in this. (A minute or 3/4 for the thin version, a minute or 5/6 for the thicker version.) Scoop them out of the pan and let drain.
Put the eggs in the water and cook them for 6,5 minutes! Then scoop them out of the pan into a bowl of ice water. To do this, literally put a few ice cubes in a bowl of water. Let the eggs cool in it.
Place the asparagus in a large bowl and add the fried bacon, Parmesan cheese slices and cress.
Peel the eggs and carefully cut them in the middle. Place them in the bowl and drizzle the dressing over the salad. Season to taste with some freshly ground salt and pepper.
Delicious bites!
The dressing can be kept in the fridge for a few days.
A microplane grater is a grater with very fine holes, everything you grate comes out almost like "snow".
I bought the bacon already fried from the supermarket. If you use fresh bacon, fry a few slices yourself in a frying pan.
