And this is how you make it:
First we make the syrup. Put all ingredients in a pan and bring to a boil. Let it all simmer for twenty minutes. Mash the pieces of pear with a stamppot pestle and pass it through a very fine sieve. Pour into a glass bottle and let cool.
Grab your shaker and add the gin, lemon juice, egg white, and pear syrup. Shake for 30 seconds.
Put a few ice cubes in the shaker and then shake again for 30 seconds and then pour through a strainer into the glasses.
