And this is how you make it:
Cut the vegetables, chop the garlic and parsley.
Heat the pan and pour in a little olive oil, fry the garlic and onion until translucent and then add the eggplant and grilled pepper. Season with the sumac, pepper and salt.
Mix everything well and reduce the heat and let it simmer for 20 minutes with the lid on the pan.
Finish the stew with the fresh parsley and serve, delicious bites!
