A friend recently came to my place for lunch and she has a Thai background so she is used to some spice. Excellent time to make this spicy miso noodle beef soup. Miso soup is a traditional Japanese dish made from miso paste, a type of fermented soybean puree. You can buy it quite easily in the supermarket or in the store. In addition to soup, you can also season sauces with it. If you want to eat vegetarian, you simply omit the meat from this noodle soup recipe.

Ingredients:
- 200 gram round steak - cut into strips
- 100 gram Zeeland bacon - cut in pieces
- 6 stumps bimi
- 150 gram shiitake - cut into slices
- 300 gram spinach
- 2 shallots - XNUMX onion - shredded
- 2 eggs
- 2 blocks noodles
- 3 cloves of garlic - XNUMX onion - shredded
- 1 Spanish / chili pepper - finely chopped
- 100 gram bean sprouts
For the soup:
- 1 liter chicken bouillon - low in salt!
- 3 el miso paste
- 2 el soy sauce
- 200 ml coconut milk
Herbs and spices:
- 1 tl chili powder
- sesame oil
- 1 el Sesame seed - can be either white or black
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab your frying pan and cut the steak into strips. Fry the strips in a little sesame oil until they are medium fried on the inside. Remove them from the pan and set them aside on a plate.
- Heat your stockpot, I used a cast iron pan with a thick bottom. Add the bacon bits and a drizzle of sesame oil and fry until they start to get crispy. Add the garlic, chopped shallot, shiitakes, and red pepper and cook until shallot is translucent.
- Boil the eggs. (soft or hard, whichever you prefer.)
- Pour the chicken stock, miso, coconut milk, and soy sauce into the pan and stir well. Add the bimi and spinach and add the blocks of noodles to the pan. Reduce the heat and let the noodles get soft.
- Take the bowls and divide the soup from the pan between the two bowls and add the beef and bean sprouts.
- Finish with some sesame seeds, chili powder and serve immediately.
