It's not the easiest recipe, but I can guarantee you that it's worth all the effort. In this blog I share a real Italian recipe cannoli Siciliani.

This Cannoli recipe is a nice basic recipe from Sicilian cuisine. It originates from Palermo and is mainly eaten during Carnival. Oh and the ricotta in this recipe, I shared a recipe for that before. You can also make these yourself. That makes the cannoli even tastier and more authentic!

Sicilian cuisine is very important for Italian gastronomy. Many famous dishes come from this island. Arancini, caponata, parmigiana di melanzane, cassata and many more! So also the cannoli, a dish that was actually only eaten during carnival.

However, this is now made all year round and is incredibly popular all over the world! Cannoli are filled with sugared ricotta, but nowadays there are many variations, you can also fill them with chocolate cream, pistachio cream, lemon cream and many more soft and sweet fillings.

Because the dough is deep fried and then filled with the soft filling, they are of course best fresh. And if you've made this Italian Siciliani cannoli recipe, you'll want nothing more than to eat them right away… Making cannoli does take some time, so it's really a fun weekend job to do together.

Ricotta is a soft, white cheese that originally comes from Italy. It is made from the whey left over after making cheese, such as mozzarella. The whey is reheated and the proteins present coagulate and are then skimmed off to form ricotta.

Ricotta has a mild, slightly sweet taste and a grainy texture. It is often used in Italian cuisine as an ingredient in sweet and savory dishes, such as lasagna, ravioli, cannoli and cheesecake.

You need:

cannoli molds
batter bowl
kitchen tongs
cooking thermometer

Ingredients:

  • 260 gram flower
  • 10 gram granulated sugar
  • 15 gram butter
  • 5 gram cocoa powder
  • ¼ tl salt
  • 1 ei
  • 5 ml White wine vinegar
  • 30 ml White wine

Filling for the cannoli :

  • 750 gram ricotta cheese
  • 100 gram granulated sugar
  • 50 gram dark chocolate - chopped into small pieces (or buy ready-made "chocolate drops").

Extra:

  • 1 ei - to smear the cannoli with
  • 500 ml sunflower oil - (can also be more, make sure there is a good layer in your pan)
  • pistachios
  • powdered sugar
  • dark chocolate

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • The night before, let the ricotta drain in a sieve in the refrigerator. Leave in the fridge overnight. 
  • Make the dough: mix the flour with the cocoa powder, salt and sugar. Then add the butter, egg, white wine vinegar and white wine while stirring and knead into a compact dough. (looks a bit like pasta dough). 
  • Cover with foil and let rest in the fridge for an hour.
  • Then remove from the fridge and cut off a piece of the dough. Take the pasta machine and turn it into thin sheets (up to about position 7). 
  •  Place the cannoli molds diagonally on top.
  • Beat the other egg in a bowl, cut the sheets into squares and fold them over the cannoli molds so that the ends of both sheets overlap. Stick it with a little of the beaten egg. 
  • Put the oil in the deep frying pan and bring to 180 degrees. (I write 500ml but that can also be a little more, depending on how wide your pan is)
  • Fry the cannoli 1 at a time for about 1-3 minutes. Make sure that the cannoli does not touch the bottom or they will burn. It is best to hold the cannoli while frying with heat-resistant kitchen tongs. 
  • Let them drain on a kitchen paper. While the cannoli is cooling you can make the filling.

Filling for the cannoli:

  • Remove the ricotta from the fridge and mix it with the sugar and chopped dark chocolate. 
  • Carefully remove the molds from the cannoli. You can often press the molds a little, so that you can easily remove them. Fill the cannoli with the ricotta filling. You can fill them generously!
  • Chop some pistachios, grate some chocolate and garnish the cannoli with this. You can also sprinkle them with powdered sugar. 
  • Delicious bites!
I would consume the cannoli right away and don't keep it in the fridge for too long, because that makes the cake soft.
