How often do you walk past the vegetable aisle at the greengrocer or supermarket and think about the aubergines: "Hummmm"?! What will or what can I actually do with this? Despite the fact that we grow tons of eggplants in the greenhouses in the Netherlands, we don't eat them that much ourselves. Which is of course a great pity because it is a very versatile vegetable. You can really prepare it in many ways. That's why I'm inspiring you again this time with a nice recipe. We make Italian stuffed eggplant rolls. The aubergine and its properties
Let me first briefly tell you why you should choose this vegetable.
- It fits into a low-carbohydrate diet anyway because it contains only 7,5 grams of carbohydrates per 100 grams. That is already a nice bonus.
- Also low in calories. Only 20 calories per 100 grams.
- Then they are also full of vitamins, minerals, magnesium and folic acid.
- Eggplants are very high in fiber. They contain 12,5 grams of fiber per 100 kcal. This will make you feel full faster and you may have less need to snack.
- Replace pasta with eggplant, you can cut the eggplant into slices, for example, replace the lasagne sheets for eggplant. This makes your dish gluten-free.
Aubergines are not only beautiful to look at, but also incredibly tasty and versatile. You can grill them, bake them, stuff them, puree them and much more. All in all, reason enough to put those beautiful purple rascals in your cart more often. They fit perfectly into a healthy lifestyle and are a supplement to your diet. Italian stuffed eggplant rolls

Ingredients:
- 1 Eggplant
For the crust:
- 2 eggs
- 100 gram bread-crumbs
- 3 el Italian herbs
For the filling of the rolls:
- 75 gram grated Parmesan cheese
- 200 gram ricotta cheese
- 100 gram grated mozzarella
- fresh basil leaves
- 1 el garlic powder
For the sauce:
- 400 ml Mutti tomato pulp
- 2 el Italian herbs
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- Peel the eggplant with a vegetable peeler. Then cut it into thin slices of half a cm. (Not too thick otherwise we can't roll them up.)
- Take two bowls. In one you beat the two eggs. In the other you put the breadcrumbs that you season with the herbs.
- Dip the aubergine slices first in the egg and then in the breadcrumbs. Make sure both sides are lined.
- Heat a frying pan with a layer of olive oil in it and fry the aubergine slices alternately and drain on a kitchen paper.
- Take another bowl and put the ricotta in it. Add the rest of the ingredients and mix into a sauce. Spread on the aubergine slices and roll up.
- Mix the Mutti tomato pulp with the herbs and put a layer on the bottom of an oven dish. Place the rolls rolled up side down in the dish.
- Pour the rest of the sauce over the top and top with some more mozzarella.
- Place in the oven for 25-30 minutes and serve immediately.
