And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Peel the eggplant with a vegetable peeler. Then cut it into thin slices of half a cm. (Not too thick otherwise we can't roll them up.)
  • Take two bowls. In one you beat the two eggs. In the other you put the breadcrumbs that you season with the herbs.
  • Dip the aubergine slices first in the egg and then in the breadcrumbs. Make sure both sides are lined.
  • Heat a frying pan with a layer of olive oil in it and fry the aubergine slices alternately and drain on a kitchen paper.

  • Take another bowl and put the ricotta in it. Add the rest of the ingredients and mix into a sauce. Spread on the aubergine slices and roll up.
  • Mix the Mutti tomato pulp with the herbs and put a layer on the bottom of an oven dish. Place the rolls rolled up side down in the dish.
  • Pour the rest of the sauce over the top and top with some more mozzarella.
  • Place in the oven for 25-30 minutes and serve immediately.
  • Delicious with a fresh rocket salad and a glass of Italian white wine.
Eggplant tip: Let the sliced ​​eggplant rest for 15 minutes with salt to reduce bitterness and extract moisture.
Variation: Add chopped sun-dried tomatoes to the filling for extra flavor.
