Eggplant Rolls with Ricotta and Mozzarella – Authentic Italian Recipe
We are going to get started with this Italian stuffed eggplant rolls. It is absolutely not a complicated recipe and you can conjure up a delicious meal with it.

Ingredients:
- 1 Eggplant
For the crust:
- 2 eggs
- 100 gram bread-crumbs
- 3 el Italian herbs
For the filling of the rolls:
- 75 gram grated Parmesan cheese
- 200 gram ricotta cheese
- 100 gram grated mozzarella
- fresh basil leaves
- 1 el garlic powder
For the sauce:
- 400 ml Mutti tomato pulp
- 2 el Italian herbs

And this is how you make it:
- Preheat your oven to 200 degrees.
- Peel the eggplant with a vegetable peeler. Then cut it into thin slices of half a cm. (Not too thick otherwise we can't roll them up.)
- Take two bowls. In one you beat the two eggs. In the other you put the breadcrumbs that you season with the herbs.
- Dip the aubergine slices first in the egg and then in the breadcrumbs. Make sure both sides are lined.
- Heat a frying pan with a layer of olive oil in it and fry the aubergine slices alternately and drain on a kitchen paper.
- Take another bowl and put the ricotta in it. Add the rest of the ingredients and mix into a sauce. Spread on the aubergine slices and roll up.
- Mix the Mutti tomato pulp with the herbs and put a layer on the bottom of an oven dish. Place the rolls rolled up side down in the dish.
- Pour the rest of the sauce over the top and top with some more mozzarella.
- Place in the oven for 25-30 minutes and serve immediately.
- Delicious with a fresh rocket salad and a glass of Italian white wine.
Variation: Add chopped sun-dried tomatoes to the filling for extra flavor.
Storage: Leftovers can be kept in the refrigerator for 2-3 days or reheated in the oven at 180°C.
Preparation: The rolls can be made a day in advance and stored in the refrigerator before baking.
Make gluten-free: Replace breadcrumbs with a gluten-free version or finely ground almonds.
