Wonderfully simple to make, eat with great pleasure. And use as many herbs as you like, whether you prefer spicy or perhaps a little milder. Actually, we just make a simple egg salad to which we add asparagus. And we boil the potatoes and then bake them in the oven with Parmesan cheese. Nice and crispy and that leaves you wanting more! I ate this Smashed Potatoes asparagus salad with my girlfriend, and she immediately said "oh I'm going to make this for my friend at home too", so we can say that the recipe has been approved!
Smashed potatoes asparagus salad
In this recipe we use ham, but if you don't eat pork you can also use roast beef. Or leave out the meat completely, that is also possible. It is best to use potatoes with their skin. You can easily mash the skin when the potatoes are cooked, and baking makes them nice and crispy.

- 200 gram potatoes in skin
- 3 eggs - hard-boiled
- 6 asparagus - cut into pieces
- 4 to stick ham - cut into pieces
- 2 twigs Parsley - finely chopped
- 2 el half vanaise
- 60 gram Parmesan cheese - grated
- 1 el Persillade (spice mix)
- ½ tl chili powder
- ½ tl curry powder
- peper
- salt
- 2 el olive oil

And this is how you make it:
- Preheat the oven to 200 degrees.
- Peel the asparagus and cook them in an asparagus pan or in a steam oven.
- Boil the potatoes in their skins for 10 minutes in salted water, then let them drain in a colander.
- Take a baking tin lined with baking paper and place the potatoes in two round shapes on it. You crush them with the bottom of a glass. (just smash it). Sprinkle with some persillade, the olive oil and sprinkle the cheese on top. If necessary, press the potatoes against each other briefly so that you get a kind of flat disks. Place in the oven for about 30 minutes until the cheese is nicely melted and crispy.
- In a bowl, mash the boiled eggs and season with the chili powder, curry powder, salt, pepper, chopped parsley, some persillade, the halvanaise and the chopped ham, and mix well. Cut the asparagus into pieces and add them too.
- Remove the crushed potatoes from the oven and carefully transfer the slice to a plate and spoon the asparagus egg salad on top.
