And so every season has its own fruit and we can vary the year round. You don't need a lot of ingredients for this salad, so it's on the table super quickly to enjoy it. For lunch, as a starter with dinner, choose yourself!

And this is how you make the Mandarin carpaccio with feta:

-I have deliberately not worked with quantities above in the ingredients list, because you have to decide for yourself how many people you are going to make this salad. I would use 1 1/2 mandarin per person.

-Peel the mandarins first and then peel off all the white skins so that it is really clean. Quite a job but it tastes better that way. Then cut the mandarin into thin slices.

-Crumble the feta into small pieces, I would stick to a maximum of 2 tablespoons per plate. So you don't need the whole block, save the rest for another tasty salad.

- Take the plates and place the mandarin slices on top.

Finally, garnish the salad with the thyme and mint leaves. Use the squeeze bottle of balsamic dressing to squeeze thin stripes over the salad. Finish it off with the olives and feta.
