Turns out this recipe took weeks to make! It was always on my to-do list, but something always came up. Perhaps an out-of-town lunch date or another priority recipe. Ingredients:

  • 1 tin can tuna
  • 1 big shallot
  • ½ cucumber
  • 1 el capers
  • ½ rode p
  • 3 pickles
  • 2 el mayonnaise
  • peper
  • salt
  • 3 eggs
  • Persillade (spice mix)
  • arugula salad - (or lettuce of your choice)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Finely chop the shallot, cut the bell pepper, pickles and cucumber into small cubes.
  • Take a bowl and put the chopped vegetables in it, add the tuna, capers, salt and pepper to taste, and the mayonnaise. Toss everything together well to make a well-mixed salad.
  • Beat the three eggs in a measuring cup and make an omelette with it. I seasoned the omelette with curry powder and some persillade.
  • Put the omelette on a plate and put some lettuce on it, then spoon a few tablespoons of tuna salad on top and fold it closed.
  • Delicious bites!
You can store the rest of the tuna salad in the refrigerator for a few days. For example, take it with you to work for lunch.
