I think it's important to show not only how you make something, but also why you make it. I can count myself really lucky that this is my job and I can earn my money with it. Oh that's not a huge fat pot... more of a "labour of love" shall we say!

I do this mainly because I enjoy it and because I hope you enjoy it too. Cooking and baking is a way for me to express my passion and creativity and to make others happy.

“Eat the rainbow of colors”, healthy eating is not as complicated as it seems. And neither does making a fresh tuna salad like this healthy avocado tuna salad. The tomatoes in this recipe give it a lot of color because we use different colors. And they all taste just a little different.

Also very tasty as a healthy snack for just moments in between. Oh be careful when buying your tuna that you choose the MSC label. That is better for the environment and for fishing!

You need:

Ingredients:

  • 1 can of tuna
  • 1 ripe avocado
  • 1 Red pepper
  • 1 Red onion
  • 15 mixed cherry tomatoes
  • 1 bag of mixed lettuce
  • ½ lemon (juice of the lemon)

From your pantry:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take your bowl there and first fill it with the lettuce, drip some olive oil over it and sprinkle with a little salt/pepper/persillade as well.
  • In another bowl make the rest of the salad, remove the tuna from the can (let it drain briefly) and put in this bowl.
  • Finely chop the red onion, chop the tomatoes in half, the bell pepper into cubes, and the avocado into cubes as well. Mix everything in the bowl and squeeze over the juice of half a lemon. You can also season this with some persillade mix.
  • Now put in the other bowl on top of the lettuce and finish with some fresh basil or parsley.
  • Delicious bites!
  • Add some pasta and mix it in for a nice pasta salad.
  • Or serve with a nice piece of baguette and olive oil.
