Some dishes or recipes I leave specially until I go on vacation. This year I wanted to make another tasty pasta and one with a lot of garlic. Due to a beautiful combination of circumstances, my foodie friend stayed Luuk together with his friend on holiday with us this year. And let the first one also love mussels and seafood. An excellent opportunity to put a delicious pasta on the table. In the region where we stay, the most popular pasta is linguine, so this delicious linguine e aglio olio with mussels. The pan and bowl went all the way up and everyone enjoyed it immensely.
And this is how you make the linguine aglio olio with mussels:
First we make the sauce for the garlic paste. Chop the garlic cloves, as well as the shallots. Cut the sun-dried tomatoes and the pepper into pieces.
Take a frying pan and add a good splash of olive oil. First fry the shallot until translucent and then add the garlic. Then the sun-dried tomatoes and pepper. Add the seafood to this. (I bought a number of trays in France with, among other things, shrimps, small squids, mussels, with some olives, and bell pepper)
Let this simmer on a low heat while we make the mussels and make the linguine.
Making the mussels:
Take a large pan that will fit the container with mussels.
Cut the zucchini into pieces, chop the onion, red pepper, and garlic.
Pour some olive oil into the pan and first fry the zucchini, onion, red pepper and garlic, add quite a bit of freshly ground pepper and salt. Wash the mussels and take out and discard any that are open. The rest can go in the pan with the wine. Add the basil and parsley. Then cook the mussels for 5 to 6 minutes until they are nicely cooked.
In the meantime you cook the linguine in salt water, I don't like al dente, I like it to be really nice and cooked.
Linguine aglio olio with mussels
Drain the pasta and allow to drain briefly, add to the pasta sauce with seafood and toss, adding a good splash of olive oil if necessary.
Serve the pasta in nice deep bowls and add the mussels. Nice white wine and: Delicious Happen
