Canestrelli, the tastiest Italian shortcrust biscuits. These delicious cookies come from the north of Italy and are widely eaten in Liguria and Piedmont. They are very soft cookies with a light lemon flavor. These cookies are often eaten for breakfast or as a snack. In Italy, almost everyone has a pack of these cookies in their cupboard. Recipe Italian canestrelli cookies
What is special about these cookies is that the eggs do not go raw through the dough. They are cooked first. Also, only the egg yolk is used, not the egg white. Once the dough has been rolled out, the cookies are cut out in the traditional canestrelli shape. This is often the shape of a flower with a hole in the center. They look a bit like Christmas wreaths. We sprinkled some powdered sugar over it.
Try sticking to just one cookie! I bet you won't be able to do that... But store the rest in a closed cookie tin or plastic storage container. They will keep well for a few days. By storing these tempting treats in an airtight container, you can be assured that they will retain their freshness.

Ingredients:
- 150 gram flower
- 3 eggs - hard-boiled
- 1 citroen - zest / zest of 1/2 lemon
- 75 gram powdered sugar
- 150 gram butter
- ½ vanilla
- 3 el powdered sugar

And this is how you make it:
- Boil the eggs and let them cool completely(!).
- Take a mixing bowl and add the flour, icing sugar, zest of the lemon zest, juice of the lemon, inside of the vanilla pod and butter (in cubes).
- Knead this with a kneading machine or with your hands for 5 minutes.
- Cut open the eggs and use only the yolk. Push the yellow through a sieve into the mixing bowl. Knead for about 10 minutes until a compact dough forms.
- Transfer the dough to a plate, cover with foil and let it rest in the fridge for 1 hour.
- After resting, dust the work surface with flour and place the dough on it. Roll out the dough with a rolling pin to about 2 centimeters thick.
- Press out the biscuits with the cookie cutters and then make a small hole with a dough ring in the middle. Place the cookies on a baking tray with baking paper and bake them in the oven at 150 degrees (with fan on) for 8 – 10 minutes.
- The cookies should not be too brown. Let them cool and sprinkle with powdered sugar before serving.
