Salad dressing. I love it and find that my salad really isn't finished without a good dressing. Especially when I'm in France I really enjoy what the supermarket shelf is so long and so extensive… All kinds of different flavors and beautiful bottles with colors. Here in the Netherlands, that is slowly changing, but still not with as much passion as with our Mediterranean neighbors. So I often make vinaigrette or dressing myself and experiment with all kinds of herbs and different oils. Salad with chicken strawberry feta.

Feta is delicious in salads because of its salty taste and crumbly texture. It adds a lot of flavor to the salad. Feta is made from sheep's or goat's milk and is lower in fat than other types of cheese, making it a healthy option for adding flavor to salads. Feta goes perfectly with other Mediterranean ingredients such as tomato, cucumber, onion, olive oil and herbs such as oregano and turns a simple salad into a full-fledged and tasty meal.

We'll start with the green beans first. Clean them and then put them in a pan with plenty of water and a pinch of salt. Bring to a boil and cook for about 15 minutes until soft.

-Meanwhile, we bake the chicken breasts. You can season these to taste. I made a curry mix with curry powder, salt, pepper, Provencal herbs and some garlic powder. Cut them into cubes and make sure there is a layer of herbs on all of them. Fry them in a frying pan with a tablespoon of olive oil. When they are cooked, set them aside.

- Take a measuring cup and put all the ingredients for the dressing in it. Put your immersion blender in it and mix it all into a nice smooth and creamy sauce.

- Grab the plates and put two handfuls of the spinach and arugula on both plates. Add the green beans. Divide the remaining strawberries among the plates. Drizzle over some of the dressing.

Finally, spoon the chicken breast cubes onto the salad and crumble the feta over it. Please choose good feta and not those cheap white cheese blocks. That only improves the taste! And afterwards Delicious Happen

    1. Hi, in this case the balsamic mustard is from the brand "Maille", I bought it in France, but maybe it is also for sale in the Netherlands. If you can't find it, take regular French mustard and add a dash of balsamic vinegar! Enjoy your meal gr Francine
